A Road That May Lead Nowhere Mac Os X

Been a while since I've been around. Place still looks good.
I'm having an issue that even Apple's upper-level support guys can't seem to help with.
Basically, I built a Windows box for a business to replace their server. This server runs their billing sotware and beyond that, is nothing more than file storage. Play 88 fortune slot for fun. It's a printing company, and they house their graphics files and other stuff on it, with one drive that's shared out to 4 systems - 2 2016 iMacs and 2 Windows 10 systems. Somethings gonna happen mac os. Neither of the Windows systems are having any trouble accessing their data at all. Zero issues.
However, on the Mac side of things, it's driving me insane. They use Adobe Illustrator and InDesign on both of them, as well as Office 2013. During the course of the day, they'll be going along fine, saving work to the server, then BAM, out of nowhere, they can't save to the server on a Mac UNTIL IT'S RESTARTED. Once the offending iMac is restarted, it'll normally be business as usual for a while until it does it again.
Some of the errors from Adobe products include:
The file is damaged and could not be repaired
The file cannot be saved. You do not have access.
So, when this happens, I've told them to save the file locally to their machine and copy it to the server. (SIDE NOTE: Adobe has repeadtedly told me that they don't support saving files over a local network. I've told them, but there's that whole not being able to get a horse to drink after being shown their water thing.)
However, what we've discovered is that when they copy the file to the server, it doesn't actually copy! I've NEVER seen this before. In fact, I spent avout 4 hours at the business last week because I wanted to see this actually happen. It did. They copied a file from the Mac to the server, it flashed a progress bar real fast, and never gave an error. But it didn't copy.
I've checked permissions until I'm blue in the face, and cannot figure out what the deal is. So, I'm hoping one of you Mac Geniuses can show me the light.
